Ingredients:

For the chicken bites:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • Vegetable oil for frying

For the Bang Bang sauce:

  • 1/4 cup mayonnaise
  • 1/4 cup sweet chilli sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 lime, juiced
  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish

Instructions:

Prepare the chicken:

  • Combine cornstarch, flour, garlic powder, onion powder, salt, and pepper in a bowl.
  • In a separate bowl, whisk together the egg.
  • Dredge the chicken pieces in the flour mixture, then dip in the egg, and finally coat again in the flour mixture.
  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the chicken bites in batches until golden brown and crispy. Drain on paper towels.

Make the Bang Bang sauce:

Mix mayonnaise, sweet chilli sauce, sriracha, soy sauce, and lime juice in a small bowl.

Assemble:

  • Toss the cooked chicken bites in the Bang Bang sauce to coat evenly.
  • Serve immediately, garnished with green onions and sesame seeds.
